Muffin Mix presented by the Ellerman House

This is a basic batter recipe for Muffin Mix which will allow you to add flavours to your liking.
Basic Muffin Mix:
– 5 Whole Free Range Eggs
– 250 g Castor Sugar
– 250 ml Milk
– 250 ml Sunflower Oil
– 500 g Cake flour
– 15 g Baking Powder
– Pinch of Salt.
Preheat the oven to 180°C.
Mix all the dry ingredients together, castor sugar, sift the flour, baking powder and salt.
In a jug mix, together all the wet ingredients: eggs, milk and sunflower oil.
Now make a well in the dry ingredients and pour the wet ingredients into it and mix till a smooth batter forms.
Bake for about 30 mins.

Lemon and Poppy Seed: zest of 3 Lemons and add 50g Poppy Seeds to the batter
Passion Fruit: Add a tin of Passion Fruit pulp to the batter
Chocolate Chip: Remove 200 g of the flour and replace it with 200 g Cocoa Powder and fold in 100 g of Chocolate Chips.
Apple: I soak 200 g chopped Dried Apple in apple juice drain it then fold it into the batter with a little cinnamon and nutmeg.
In the summer, fold in any of the beautiful soft fresh berries into the mix, such as Blueberries, Raspberries (a pinch of Cinnamon can be added to the batter when baking with soft fruits).
