Earth Hour at Marlin Lodge, Mozambique

In honour of this years Earth Hour on 31st March 2012, the Marlin Lodge in Mozambique will be turning off the lights and welcoming its guests to enjoy cocktails as they watch the sun go down. This will be followed by a sushi demonstration and tasting with the Chef and culminate in a festive beach braai by starlight. The Marlin Lodge’s generator will be off from 20:30 till 21:30 for earth hour.

Earth hour continues to inspire people the world over to unite for an hour in switching off all electrical appliances, lights and any other form of electric motor in order to help global consumption, global warming and global awareness of these issues.

Enjoy your own taste of a Marlin with chef Tess’s famous coriander pesto:

Coriander & Cashew Nut Pesto

Ingredients

A large bunch of Coriander about 2 cups worth (with stalk & root)
1cup of toasted plain cashew nuts
2 cloves of garlic
Salt & pepper
1 cup of good Portuguese Olive Oil
1 chilli seeded and chopped finely
Juice of half a lime

Preparation

Place all the above ingredients into a blender and process to the desired consistency.
I like to leave mine quite chunky.
This Pesto goes well with grilled chicken or fish and also adds sunny island flavours to fresh pasta as a salad.
