The Marlin Lodge in Mozambique, Southern Africa

The Marlin Lodge in Mozambique, Southern Africa

A splash dot in Mozambique for how climate is impacting our oceans!

As oceans represent the planet’s largest carbon sink, and because oceans absorb 30 million tonnes of CO2 daily, the Dugong Emergency Protection Project which is managed by the Endangered Wildlife Trust (EWT) is concerned about the increasing ocean acidity.

The Marlin Lodge in Mozambique in partnership with EWT hosted Mozambique’s only 350.org climate change event.  Guests staying at The Marlin Lodge joined together as a floating human dot in the waters of the Bazaruto Archipelago – heads in, feet out, hands joined, and making a splash about climate change!

At the Marlin Lodge in Mozambique, the delicious beach picnics give guests the opportunity to relax and kick off their shoes on a private shell-speckled island or stroll hand in hand along pristine beaches until the sun sets.

The Marlin Lodge, Beach Picnics

The Marlin Lodge, Beach Picnics

The beautiful country of Mozambique which lies on the eastern coast of Southern Africa, is home to magnificent hotels and resorts.  The Marlin Lodge in Mozambique has talented chefs who pack a scrumptious picnic basket filled with island delights. Enjoy your own taste of a Marlin with chef Tess’s famous coriander pesto:

Coriander & Cashew Nut Pesto

Ingredients

A large bunch of Coriander about 2 cups worth (with stalk & root)
1cup of toasted plain cashew nuts
2 cloves of garlic
Salt & pepper
1 cup of good Portuguese Olive Oil
1 chilli seeded and chopped finely
Juice of half a lime

Preparation

Place all the above ingredients into a blender and process to the desired consistency.
I like to leave mine quite chunky.
This Pesto goes well with grilled chicken or fish and also adds sunny island flavours to fresh pasta as a salad.
