Recipe for Koeksisters

With September being Heritage Month we thought of sharing a recipe for a “Local is Lekker” favourite, namely Koeksisters.   This super easy and delicious recipe has been provided by the Pitse Game Lodge situated in the Welgevonden Game Reserve in South Africa.

Ingredients for dough       

250ml flour

10ml baking powder

Pinch nutmeg

2ml salt

10g margarine

2ml lemon juice

Iced water to mix

Ingredients for syrup  (prepare the day before and chill)

250ml sugar

150ml water

2ml lemon juice

Piece cinnamon stick

Piece of bruised ginger

Pinch of grated lemon rind

Method for dough

Sift all the dry ingredients – rub margarine into sifted flour.

Add lemon juice and iced water to make a stiff dough.

Roll out 1 cm thick, cut into strips 3cm x 9cm – divide each strip into 3 for about 7.5cm and plait.

Fry in hot deep fat, drain on paper and dip in chilled syrup

Method for syrup

Place all ingredients into a saucepan and boil for 10 minutes. Allow to cool.

Discard the ginger and cinnamon stick.
